Vinsanto is the most famous Santorini dessert wine, produced in limited quantity and it represents an important part of Santorini’s history. The Santorini’s Vinsanto is made in a passito style from grapes dried in the sun after harvest.

Vinsanto is an ancient winemaking tradition of Santorini that dates back thousands of years and represents an important part of Santorini’s history.

In order for a wine to be labeled Vinsanto in Santorini the wine must be predominately made from the Assyrtiko grape—at least 51%, the remaining 49% is made up of Athiri and Aidani and some small amounts of locally grown white varieties. Vinsanto does not undergo any chaptalization and is made up only of the natural sugars and acids of the grapes. Vinsanto is made from late harvested grapes that have been dried in the sun for 12–14 days. They are then crushed and fermented and are then aged for a minimum of 24 months in oak barrels. Vinsanto must achieve a minimum of 9% abv.

Vinsanto is known for its golden-orange to dark amber coloring with a complex bouquet of dried apricots, golden raisins and other dried fruits combined with sweet spice and an underlying minerality. Although it is classified as a dessert wine, the high acid of the Assyrtiko and other indigenous grapes grown on the island balance the sugar content to produce an extremely palatable drink that can be paired with a variety of foods.

The winemaking style of vin santo can also be found throughout Italy and has historically been known as Italy’s “Holy Wine.” However, its origins partially lie in Santorini. Santorini was used as a trading port through much of history but produced very little goods themselves. Only with the Venetian domination, the island focused on the cultivation of wine that would be exported from the island throughout the Mediterranean. Packages taken from the island were labeled, “Santo,” to denote their origin. Wine from the island was denoted, “vin” or “vino” (the Italian word for “wine”) to denote the packages contents; thus, the term “Vinsanto” was born.

In 2002, the EU determined that there was enough information to nameSantorini, Greece as Vinsanto’s place of origin thus granting the island exclusive rights to the use of the name Vinsanto on its sweet wines. Italy may still use vin santo or vino santo to denote its winemaking style. Laying down certain rules for applying Council Regulation as regards the description, designation, presentation and protection of certain wine sector products.

HEALTH BENEFITS OF VOLCANIC ASH SCRUB SOAP.

Health benefits of Volcanic Ash on skin have been known for centuries by the native Greeks on Santorini especially those that live near any of the active volcanoes of Santorini. The benefits of Volcanic Ash on the skin extend to the treatment of a wide variety of infections due to its anti-bacterial, anti-viral, anti-yeast and overall disinfectant qualities. Volcanic Ash is high in Sulphur, an active Mineral ingredient which not only helps the body to resist bacteria but actually destroy it. Sulphur exists in your hemoglobin and connective body tissue: –

  • to disinfect the blood;
  • stimulate bile secretion;
  • aid the oxidation reactions in the body
  • protect the protoplasm of cells; and
  • for the synthesis of Collagen (one of the main proteins needed for the structural integrity of your skin).

Sulphur slows down the aging process because of its ability to protect against the toxic effects of pollution and radiation. It is part of the chemical structure of the amino acids glutathione, taurine, cysteine, and methionine.

Volcanic Ash is truly Mother Nature’s natural skin purifier. Not only is it rich in minerals, its exfoliating properties mean that it is ideal for removing the dead outer layers of skin as it cleanses the skin in the process. Volcanic ash particles are finely crushed and may be as small as 1/1,000th of an inch (or 0.025mm). The ash does not dissolve in water and so makes for a fantastic, mild exfoliant. We also use volcanic ash in our foot scrubs and body scrubs because of its purification and cleaning qualities.

Volcanic ash is quite similar to fine sand (silicon) and the mineral particles are tiny (easily (under 2 mm across). The ash is ejected from the mouth of the volcano, along with quite big, volcanic rocks. This plume of ash, rock and pumice also conatins super-heated steam. This violet, volcanic activity (known as phreatic eruptions) shatters some of these rocks and the volcanic magma divides into very small particles. This plume, erupting out of the volcano vent or vents results in these very fine particles of ash being scattered for long distances giving the appearance of a moon scape.

Volcanic ash mixed into the earth will bond to water, under pressure. Pure ash, mixed with spring or mineral water, is used to create mud baths (like in a spa) and facial mud masks.
